Upside Down Apple Cake

This recipe provides a delicious way to make your boxed mix taste like a homemade apple cake.

Ingredients

  • Âľ cup dark brown sugar
  • 3 Tbsp. butter
  • 1 tsp. water
  • 4 Granny smith apples, peeled, cored and sliced
  • Cooking spray
  • 1 box (15.25 oz.) yellow cake mix
  • Water, vegetable oil and eggs called for on yellow cake mix box
  • 1 tsp. vanilla extract
  • **For Crème Anglaise:
  • 2 cups half and half
  • 4 egg yolks
  • 2-3 Tbsp. sugar
  • 1 tsp. vanilla extract
  • 1 Tbsp. brandy, if desired
  • Vanilla ice cream, if desired instead of Crème Anglaise

Directions

  1. Preheat oven to 350°F.

  2. In 12” nonstick skillet over medium heat, melt butter; add dark brown sugar (reserving 3 tablespoons for later) and water. Cook, stirring frequently, until the sugar dissolves to form a syrup, about 2-4 minutes. Add apple slices and mix gently to incorporate them with the mixture. Cook for one more minute and set aside.

  3. Spray a 13”x9” glass baking dish with cooking spray. With a fork, carefully place apple slices in a flower pattern, starting at the center. Pour 2-3 tablespoons of the syrup on top of apples (reserving some for spooning over the cake when serving, if desired).

  4. In a large bowl, prepare cake mix using water, vegetable oil and eggs according to package directions, adding the vanilla extract.

  5. Carefully pour batter evenly on top of apples. Bake according to box directions for a 13”x9” baking pan, around 30 minutes, until the top is golden brown and a toothpick comes out clean when inserted in the center. Let cool for 3 minutes. Ease edges with a thin spatula or knife. Carefully cover with a platter and invert the cake.

  6. To make Crème Anglaise, combine half and half, yolks, vanilla extract, sugar and brandy in 1 quart nonstick saucepan over medium heat. Mix with wire whisk, stirring constantly, until the mix thickens like a custard, about 10-12 minutes. Serve on small bowl.

  7. Cut the warm cake into pieces and drizzle each pieced with about 2 tablespoons warm or cold Crème Anglaise, as desired.
