Perfectly Peachy Waffles

Waking up early is easy when you enjoy these delicious fruit-topped waffles!



  • 26 oz. sliced peaches, canned in juice
  • 1 Tbsp. cornstarch
  • Ā¾ tsp. ground cinnamon
  • 1 banana, sliced
  • 1 Tbsp. fresh lemon juice
  • 1 cup red seedless grapes
  • 8 low-fat, whole grain waffles (4ā€¯ diameter)


  1. Drain peaches, reserving 1 cup of juice. Pour juice into a small saucepan. Set peaches aside.

  2. Add cornstarch and cinnamon to juice, stirring until blended and smooth. Cook over medium-high heat, stirring constantly, until the mixture thickens and boils.

  3. Meanwhile, toast waffles and keep warm. Carefully mix banana slices with lemon juice to prevent browning.

  4. In a large bowl, combine banana slices, drained peaches and grapes with juice mixture.

  5. Place a waffle on each plate and top with equal portions of fruit mixture. Refrigerate any fruit mixture leftovers.
