

No-Bake Fromager d' Affinois Cheesecake
Say ‘I love you’ with this easy-to-make, French riff on the classic cheesecake, a perfect dessert for a romantic night in.

Ingredients
- ½ lb Fromager d’ Affinois, rind removed
- 1 lb cream cheese
- ½ cup sugar
- 2 tsp vanilla extract
- 2 ½ tsp unflavored gelatin
- ¾ cup graham crackers, crushed
- 2 tbsp unsalted butter, melted
Directions
In a food processor or blender, combine the Fromager d’ Affinois, cream cheese, sugar and vanilla extract until smooth.
Place milk and gelatin into a small saucepan and let stand for 5 minutes. Cook and stir the mixture over low heat until gelatin is dissolved.
Mix in the gelatin mixture into the cream cheese mixture.
In a medium bowl, stir together the crushed graham crackers and melted butter until crackers are moistened. Press mixture on bottom of an 8-inch pie pan.
Pour final mixture into the graham cracker crust. Cover and chill overnight.
