If you enjoy blueberry muffins, you'll like this shortcake with fresh orange zest.
TOTAL TIME:20 min.
- 1/3 cup sugar, plus 3 tablespoons
- 3/4 cup orange juice, divided
- 1 teaspoon orange zest
- 2 cups biscuit mix
- 3 tablespoons butter, melted
- 1 pound fresh blueberries
Preheat oven to 425Â° F.
In a bowl, combine berries, 1/3 cup sugar, 1/4 cup orange juice and orange zest. Chill in refrigerator for about 15 minutes.
In another bowl, combine biscuit mix, 1/2 cup orange juice, 3 tablespoons sugar and butter. Mix until soft dough forms. Scoop dough onto ungreased cookie sheet. Bake for about 10 minutes; until golden.
Slice shortcakes, place berry mixture on bottom half. Replace top of biscuit, add a little more berry mixture and top with whipped cream, and juice from berries.
